What each ingredient does

Sugar
Sweetens the preserve and, at this concentration, binds water so the syrup thickens and keeps.
Strawberries
Supply the fruit flavour and bulk, softening as they cook into the preserve.

The step that matters

Boil the syrup for the full additional 15 minutes after the fruit is cooked.. Boiling evaporates water and concentrates the sugar. Enough sugar concentration is what lets the syrup thicken and keep, so stopping early can leave the preserve runny.
