Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the crabs

  1. Plunge the live crabs into boiling water and cook for 15-20 minutes below boiling point.

  2. Transfer crabs to cold water to cool.

  3. Remove the claws and legs by twisting them off, then remove the apron.

  4. Break the body from the shell and save the stomach and liver.

  5. Open the body and remove the white meat with your fingers.

  6. Scrub the upper shell with a brush and dry it.

Make the filling

  1. Make a sauce by melting butter, adding flour, salt, mustard, and cream.

  2. Stir in the remaining ingredients and mix well.

Bake and serve

  1. Fill the crab shells with the mixture and top with buttered breadcrumbs.

  2. Bake in a hot oven at 400°F (200°C) until the crumbs are browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crabs
Provide the white meat that forms the body of the filling.
Butter
Enriches the sauce and helps brown the breadcrumb topping.
Flour
Thickens the melted butter and cream into a sauce that binds the filling.
Cream
Adds moisture and richness, giving the filling a smooth, soft texture.
Hard-cooked eggs
Add body and a soft, set texture to the filling.
Mushrooms
Add moisture and earthy flavor to the filling.

The step that matters

Cook the live crabs in boiling water. Plunging live crabs into boiling water kills them quickly and cooks the meat evenly. Keeping the water at a steady simmer below a hard boil, as the record specifies, helps prevent the shell and meat from toughening and splitting.
