Why it works: Milk and vanilla are a kitchen classic. They rank in the top 5% of all ingredient pairs, and cooks put them together in 19,187 recipes. Both carry ethyl caproate, which smells fruity, apple peel. The science ↓

Tapioca Cream

Ingredients

Directions

Prepare the tapioca

  1. Rinse the tapioca and soak it in cold water until soft.

  2. Cook the soaked tapioca in hot milk in a double boiler until transparent, about 45-60 minutes.

Make the custard

  1. Separate the egg yolks and whites.

  2. Beat the yolks slightly.

  3. Add sugar and salt to the yolks, then gradually pour in the tapioca while beating.

  4. Return the mixture to the double boiler and cook until creamy.

  5. Remove from heat, cool, and stir in the vanilla.

Finish and serve

  1. Beat the egg whites until stiff. If using as a meringue, add 2 tablespoons powdered sugar.

  2. Spread the beaten whites over the tapioca mixture in a pudding dish and brown in the oven, or fold the beaten whites into the mixture.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks and turns transparent, giving the cream its body.
Egg yolks
Enrich the cream and help thicken it as they cook gently with the tapioca.
Egg whites
Whipped to stiffness, they add lightness as a meringue or folded-in foam.
Milk
Cooks with the tapioca to form the creamy base of the pudding.
Sugar
Sweetens the cream and adds flavor to the custard base.

The step that matters

Return the mixture to the double boiler and cook until creamy. Egg yolks can curdle or scramble if overheated. Gentle heat in a double boiler lets them thicken the cream smoothly without grainy bits.
