What each ingredient does

Milk
Provides the proteins that set into curd, and the liquid that drains off as whey.
Rennet
Enzyme that clots the milk proteins into a firm curd.

The step that matters

Heat the milk to 98°F (37°C). Rennet works best near body temperature. Milk that is too hot can destroy the enzyme, and milk that is too cold sets slowly or not at all, so the curd may fail to firm.
