Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cream or milk
Provides the rich liquid base and fat that gives the set cream its smooth mouthfeel.
Gelatine
Sets the liquid into a firm, sliceable body as it cools.
Egg yolks
Thicken the mixture and add richness and a custard-like flavour.

The step that matters

Gradually add the hot mixture to the egg yolks, stirring continuously.. Adding hot liquid to yolks too quickly can scramble them. Adding it slowly while stirring tempers the yolks so they thicken smoothly into the custard.
