Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the sauce as they heat and create a smooth, rich texture.
Cream
Adds richness and body, giving the sauce a smooth, velvety mouthfeel.
Lemon juice
Adds acidity that brightens the rich sauce and balances its flavour.

The step that matters

Stir over medium heat without letting it boil. Egg yolks thicken at gentle heat but scramble if overheated, leaving the sauce grainy. Stirring constantly and stopping just before boiling keeps it smooth, which is why straining afterward helps catch any small bits.
