Roasted Sweetbreads

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Soak the sweetbreads in lukewarm water for 3 to 4 hours to remove impurities.

  2. Pour boiling water over them and let them sit for 2 to 3 minutes.

Simmer

  1. Place them in a saucepan with carrot, turnip, parsley, thyme, bay leaf, and mace.

  2. Cover with a little water or soup stock and boil for 20 minutes.

Coat and bake

  1. Dry the sweetbreads on a cloth, then coat them in egg and roll in bread crumbs.

  2. Brown them in the oven at 400°F (200°C).

Serve

  1. Serve on toasted bread, strain the cooking liquid, add cream, and pour over the toast.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
The main protein, which turns tender and mild after soaking and simmering.
Egg
Binds the bread crumb coating so it stays on the sweetbreads while browning.
Bread crumbs
Form a crisp, golden crust when baked, adding texture contrast to the tender interior.
Cream
Adds richness and a smooth body to the strained cooking liquid poured over the toast.

The step that matters

Drying before coating. Surface moisture stops the egg and bread crumbs from adhering evenly, so the coating can slide off or steam instead of browning in the oven.

Swap the mace

How well each one fits the dish's main ingredients (carrot, turnip, parsley, thyme, egg, bread, cream):

  1. Marjoramfits better
