Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

To Preserve Citron Melon

Ingredients

Directions

Prepare the melon

  1. Cut the citron melons into strips or rings and remove the inside.

  2. Soak the melon pieces in a strong saltwater solution for 2–3 days, changing the water frequently.

  3. Soak the melon pieces in fresh water for 24 hours.

  4. Soak the melon pieces in alum-water for 1 hour.

  5. Boil the melon pieces until tender.

  6. Return the boiled melon pieces to the alum water.

Make the syrup and finish

  1. Use 1 pound of loaf sugar for every pound of fruit.

  2. Boil lemon slices or a piece of white ginger in the syrup.

  3. Once cool, gently boil the melon in the syrup for 30 minutes.

What each ingredient does

Citron melon
Forms the firm, translucent body of the preserve once cooked and syrup-soaked.
Loaf sugar
Sweetens the preserve and, as a syrup, draws water out and preserves the melon.
Alum
Helps the melon pieces stay firm and crisp through the long soaking and boiling.

The step that matters

Return the boiled melon pieces to the alum water. Alum firms the pectin-rich tissue so the melon keeps its crisp bite instead of turning soft and mushy during later cooking.

Swap the melon

How well each one fits the dish's main ingredients (sugar, lemon, ginger):

  1. Orangefits better
  2. Limefits better
  3. Mangofits better
  4. Melonthe original

Fit is the average pairing score against sugar, lemon, ginger. Candidates are from the same food group and used in at least 100 recipes.
