What each ingredient does

Sugar
Sweetens the jelly and, with the fruit's pectin and acid, helps it set firmly.
Currant juice
Provides the main flavour and the pectin and acid that allow the jelly to gel.

The step that matters

Adding the hot sugar to the boiling juice. Sugar must dissolve fully and the mixture must reach a rolling boil so the pectin and acid can work together to set the jelly. Heating the sugar first helps it dissolve quickly without cooling the juice.
