Why it works: Beef and carrot are a kitchen classic. They rank in the top 10% of all ingredient pairs, and cooks put them together in 6,606 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Beef Soup

Ingredients

Directions

Prepare the beef

  1. Cut away the fat from the beef and chop it finely.

  2. Combine the chopped beef with an equal weight of cold water and let it stand for 1-2 hours.

Make the soup

  1. Simmer the mixture slowly until it comes to a boil.

  2. Boil the bones separately in a little water and add the strained broth to the soup.

  3. If using beef from a shank, mix flour and cream, then pour it into the boiling soup.

  4. Add salt and vegetables if desired for flavor.

Storage

  1. For storage, only add thickening and vegetables to the portion needed for one meal.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main flavor and body of the soup as it simmers in the water.
Flour
Thickens the soup as it boils, giving it a fuller, heavier texture.
Cream
Adds richness and fat, softening the flavor and texture of the thickened soup.

The step that matters

Pour the flour and cream mixture into the boiling soup. Flour mixed with cream should be stirred to a smooth slurry before it goes into boiling liquid. Starch added to hot liquid without first dispersing it can clump into lumps that are hard to smooth out.

Swap the carrot

The recipe marks carrot as optional. How well each one fits the dish's main ingredients (beef, flour, cream):

  1. Leekfits better
  2. Potatofits better
  3. Chivefits better
  4. Carrotthe original

Fit is the average pairing score against beef, flour, cream. Candidates are from the same food group and used in at least 100 recipes.
