What each ingredient does

Lean beef
Provides the meat flavour and body that the gravy is built from.
Arrowroot
Thickens the liquid into a smooth, glossy gravy as it heats.
Mushroom ketchup or harvey's sauce
Adds savoury, umami depth and a dark colour to the gravy.

The step that matters

Stirring the arrowroot into the gravy. Arrowroot must be mixed with cold water first so it does not clump, then it thickens once the gravy is hot. Bringing it to a boil activates full thickening, so the gravy should be brought up to a boil after the arrowroot is added.

Swap the arrowroot
