What each ingredient does

Cucumbers
Forms the bulk of the salad and gives it a crisp, fresh texture.
White onions
Adds sharp, aromatic flavor that mellows during the long rest.
Green peppers
Adds mild, grassy flavor and extra crunch.
Mustard seed
Contributes pungent, sharp flavor that is central to the pickle's taste.
Salt
Draws water out of the vegetables so they drain and firm up.
Vinegar
Adds acidity that sharpens the flavor and helps preserve the mixture.

The step that matters

Draining the salted mixture for 24 hours. Salt pulls water out of the cucumbers and onions. Draining removes that liquid so the vegetables stay crisp and the vinegar is not diluted, which helps the salad keep its texture and flavor during the long rest.
