Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tomatoes
Form the body and bulk of the ketchup.
Cloves
Add warm, aromatic spice flavour.
Pepper
Adds sharp, pungent heat to the seasoning.
Nutmegs
Add warm, sweet aromatic flavour.
Wine
Adds acidity and depth to the sauce.

The step that matters

Salting the peeled tomatoes for 24 hours. Salt draws water out of the tomatoes through osmosis, so the pulp loses moisture and concentrates. Leaving it too briefly or skipping it leaves a thinner ketchup that takes longer to reduce.

Swap the tomato

How well each one fits the dish's main ingredients (clove, pepper, nutmeg, wine):

  1. Capsicumfits better
  2. Carrotfits better
  3. Shallotfits better
  4. Tomatothe original

Fit is the average pairing score against clove, pepper, nutmeg, wine. Candidates are from the same food group and used in at least 100 recipes.
