Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sugar
Sweetens the ice and lowers its freezing point so it stays softer and scoopable.
Orange or lemon juice
Provides acidity and the main citrus flavor.
Egg whites
Beaten in at half frozen, they add air and a lighter, fluffier texture.
Orange rind
Steeped in water to carry citrus aroma into the base.

The step that matters

Adding the egg whites at half frozen. If the mixture is fully frozen, the beaten whites cannot blend in evenly and the ice stays dense. If it is too liquid, the whites deflate and the air is lost, so timing controls the texture.

Swap the orange

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better
  4. Orangethe original

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
