Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Raw potatoes
Supply starch and moisture that form the body of the starter.
Flour
Adds starch that thickens the mixture and gives the yeast material to work on.
Sugar
Provides readily fermentable sugar that feeds the yeast.
Yeast
Ferments the sugars and produces carbon dioxide, which makes the mixture rise.

The step that matters

Add the yeast when the mixture is lukewarm. Yeast is a living organism. Very hot liquid can kill it, so the mixture must be cool enough to keep the yeast active. If it is too cold, fermentation is slow, so it should be lukewarm.

Swap the potato

How well each one fits the dish's main ingredients (flour, sugar, hops):

Fit is the average pairing score against flour, sugar, hops. Candidates are from the same food group and used in at least 100 recipes.
