Why it works: Flour and butter are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 124,287 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓
Potato Bread
Ingredients
Directions
The book says “a moderately hot oven”. The 350°F in the steps is the modern equivalent, not the book's own figure.
Prepare the starter
Cover the potatoes with boiling water and cook for 30 minutes. Drain and mash them.
Pour the boiling water over the mashed potatoes and let it cool until it is warm.
Add the yeast and 3 quarts of flour, mixing with a spoon.
Cover the bowl with a cloth and a board or tin cover, and let it rise overnight (9‑10 hours).
Knead and rise
In the morning, mix in the salt and half of the remaining flour.
Use the rest of the flour for kneading the dough on a board for 20‑30 minutes.
Place the dough back in the bowl, cover it, and let it rise until doubled in size.
Shape and bake
Shape the dough into loaves and let them rise again until doubled.
Bake in a moderate oven (350°F / 175°C) for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Potatoes
- Starch and moisture that keep the bread soft and help it stay fresh longer.
- Yeast
- Ferments sugars in the dough, producing gas that makes the bread rise.
- Flour
- Forms gluten, the stretchy network that traps gas and gives the loaf its structure.
- Salt
- Controls yeast activity and strengthens gluten, giving the bread flavour and a firmer crumb.
The step that matters
Overnight rise of the starter. The dough needs a long, cool, covered rise so yeast can ferment slowly and build flavour and gas. Too little time leaves the bread dense; the dough should be covered to keep its surface from drying and forming a skin.
Swap the potato
How well each one fits the dish's main ingredients (flour, sugar, butter):
- Arrowrootfits better
- Shallotfits better
- Sweet potatofits better
- Potatothe original
Fit is the average pairing score against flour, sugar, butter. Candidates are from the same food group and used in at least 100 recipes.
