Cream Puffs

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the puff dough

  1. In a saucepan, bring the boiling water and butter to a boil.

  2. Stir in the flour while boiling until combined, then let it cool.

  3. Add the beaten eggs to the cooled mixture and mix well.

  4. Drop spoonfuls of the mixture onto a baking sheet and bake at 400°F (200°C) for 20 minutes.

Make the cream filling

  1. For the cream filling, boil the milk in a separate saucepan.

  2. In a bowl, beat together the sugar, eggs, and flour.

  3. Stir the egg mixture into the boiling milk and cook until thickened.

  4. Remove from heat and flavor with vanilla extract.

Fill and serve

  1. Once the puffs are cool, open them and fill with the cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds fat and richness, and helps give the dough its tender texture.
Flour
Provides structure as the starch sets, holding the puffs and custard together.
Eggs
Add structure and moisture to the dough and thicken the cream filling as they set.
Milk
Forms the liquid base of the cream filling, adding richness and body.
Sugar
Sweetens the cream filling and helps it stay smooth.

The step that matters

Baking the dough drops. The puffs need a hot oven so the water in the dough turns to steam and pushes them up into hollow shells. Opening the oven early can cause them to collapse.

Swap the vanilla

How well each one fits the dish's main ingredients (butter, flour, egg, sugar, milk):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against butter, flour, egg, sugar, milk. Candidates are from the same food group and used in at least 100 recipes.
