What each ingredient does

Beef shank
Long simmering releases flavor and gelatin into the broth, giving the soup its body.
Onions
Frying until brown builds sweetness and savory depth in the soup base.
Beef fat
Frying the onions in it carries flavor and adds richness to the soup.
Mashed potatoes
Starch thickens the broth, giving the soup a creamy, thick texture.

The step that matters

Frying the onions until brown. Onions need enough time and heat to caramelize; pale onions give a flat flavor, while over-browned ones turn bitter. Browning them in fat builds the savory base of the soup.
