Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lean beef from the shank
Provides the meat and flavour that makes the broth rich when simmered with bones.
Carrot
Browning and sweetness add depth of flavour to the finished soup.
Onion
Browning builds savoury, aromatic flavour that carries into the broth.
Turnip
Adds mild sweetness and body to the soup as it cooks.
Sugar
Promotes browning of the vegetables and rounds out the savoury flavour.
Celery seed
Contributes a warm, aromatic savoury note to the broth.

The step that matters

Letting the broth sit overnight. Chilling lets the fat rise and solidify on the surface, so it can be lifted off. Skipping this leaves the soup greasy.

Swap the mace

How well each one fits the dish's main ingredients (beef, carrot, onion, turnip, sugar, clove, allspice):

  1. Cinnamonfits better
  2. Thymefits better
  3. Marjoramfits better
  4. Macethe original

Fit is the average pairing score against beef, carrot, onion, turnip, sugar, clove, allspice. Candidates are from the same food group and used in at least 100 recipes.
