What each ingredient does

Sweet breads
Main ingredient; its tender, delicate texture is the centre of the dish.
Egg
Binds the bread crumb coating so it adheres to the sweet breads during frying.
Bread crumbs
Form a coating that browns in the butter, adding crisp texture.
Butter
Fries the coated sweet breads, promoting browning and rich flavour.
Sweet cream
Adds richness and body to the sauce poured over the sweet breads.
Flour
Thickens the cream mixture into a sauce when brought to a boil.

The step that matters

Removing the stringy parts after scalding. Sinew and membrane left in the sweet breads stay tough when cooked, so they must be trimmed while the tissue is still warm and pliable after scalding.

Swap the parsley

How well each one fits the dish's main ingredients (bread, egg, butter, cream, pepper, flour, mushroom):

  1. Nutmegfits better
  2. Parsleythe original
  3. Thymefits about as well
  4. Tarragonfits about as well

Fit is the average pairing score against bread, egg, butter, cream, pepper, flour, mushroom. Candidates are from the same food group and used in at least 100 recipes.
