Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe tomatoes
Provide the main body, moisture and sweet-tart flavour that the sauce is built on.
Vinegar
Adds acidity that sharpens the flavour and helps preserve the finished sauce.
Garlic
Adds pungent aroma and savoury depth that mellows during long cooking.
Cloves
Contribute warm, aromatic spice notes that build the ketchup's characteristic flavour.
Allspice
Adds warm, aromatic spice notes that round out the sauce's flavour.

The step that matters

Boil until reduced by half. Long simmering evaporates water and concentrates the tomato solids and sugars, thickening the sauce. Stopping early leaves it thin and watery, while overcooking can make it too dark and sticky.

Swap the tomato

How well each one fits the dish's main ingredients (vinegar, clove, allspice, pepper, garlic):

  1. Mustardfits better
  2. Capsicumfits better
  3. Shallotfits better
  4. Tomatothe original

Fit is the average pairing score against vinegar, clove, allspice, pepper, garlic. Candidates are from the same food group and used in at least 100 recipes.
