Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe tomatoes
Provide the bulk of the pulp, body and fresh tomato flavour as the sauce reduces.
Vinegar
Adds sharp acidity that balances sweetness and helps keep the sauce stable.
Onions or garlic
Contribute savoury aroma and a sharp, pungent background note.
Red peppers
Add sweet, vegetal pepper flavour and colour.
Allspice
Adds a warm, clove-like aroma that rounds out the sauce.
Cloves
Add intense, warm spice aroma in small amounts.

The step that matters

Boil until thickened. Thickening happens through evaporation, so the sauce must simmer long enough to lose water. Near the end it is thick and prone to scorching on the bottom of the pot, so stir often and watch closely.

Swap the onion

How well each one fits the dish's main ingredients (tomato, vinegar, allspice, clove, pepper):

  1. Capsicumfits better
  2. Mustardfits better
  3. Carrotfits better
  4. Onionthe original

Fit is the average pairing score against tomato, vinegar, allspice, clove, pepper. Candidates are from the same food group and used in at least 100 recipes.
