Crab Apple Jelly and Jam

Ingredients

Directions

Prepare the apples

  1. Remove stems and blossoms from the crab apples.

  2. Scald the apples and pour off the first water.

  3. Place the apples in plenty of water and cook slowly until they soften.

Make the jelly

  1. Dip off the juice for jelly.

  2. Strain the juice through flannel.

  3. Use 1 pound of juice for every 1 pound of sugar for the jelly.

Make the jam

  1. Add more water to the remaining apples and let them stew until very soft.

  2. Strain the pulp through a sieve to remove cores and seeds.

  3. To the pulp, add brown sugar, pound for pound.

  4. Cook the mixture carefully while stirring.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab apples
Provide the fruit, pectin and tart flavor that set the jelly and jam.
Sugar
Sweetens the jelly and helps it set into a firm, spreadable gel.
Brown sugar
Sweetens the jam and adds a deeper, caramel-like flavor.

The step that matters

Cook the jam mixture carefully while stirring. Sugar can scorch on the bottom of the pan if left unstirred, and the sugar must dissolve fully before boiling so the jam sets evenly without a burnt taste.

Swap the apple
