Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

Directions

Simmer the citron

  1. Combine 1 pint of water in a pot and bring to a simmer for 20 minutes.

  2. Add the citron strips and boil for 1 hour.

Add the lemons and ginger

What each ingredient does

Citron
Its thick rind softens during the long boil, becoming tender and translucent enough to eat.
Lemons
Add sharp acidity and bright citrus aroma to the sweet, preserved citron.
Root ginger
Adds warm, peppery aroma that balances the sweetness of the preserve.

The step that matters

Adding the lemons and ginger. Adding them just before removing the pot and boiling only briefly keeps their bright aroma and flavour. Prolonged boiling breaks down citrus pulp and can make the flavour bitter. Not stirring helps the slices stay intact.

Swap the ginger

How well each one fits the dish's main ingredients (lemon, gelatin):

  1. Tarragonfits better
  2. Parsleyfits better
  3. Peppermintfits better
  4. Gingerthe original

Fit is the average pairing score against lemon, gelatin. Candidates are from the same food group and used in at least 100 recipes.
