Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal shin
Gives the stock its body and rich meaty flavour as it simmers for hours.
Ground rice
Thickens the soup so it has a smooth, lightly body-filled texture.
Sweet cream
Adds richness and a silky texture to the finished soup.

The step that matters

Removing the fat after cooling. Fat rises and sets on top of a chilled stock. Leaving it in makes the soup greasy, so it should be fully lifted off before the cream is added.

Swap the mace

How well each one fits the dish's main ingredients (veal, onion, pepper, rice, cream):

  1. Celeryfits better
  2. Turmericfits better
  3. Garlicfits better
  4. Macethe original

Fit is the average pairing score against veal, onion, pepper, rice, cream. Candidates are from the same food group and used in at least 100 recipes.
