Dressed Crab

Ingredients

Directions

Prepare the crab

  1. Crack all the claws of the crab, keeping the flesh intact.

  2. Remove the breast or thorax from the shell and discard the apron and gills.

  3. Pick out all the white meat and place it on a plate.

  4. On another plate, place the firm contents of the carapace, dividing them into hazelnut‑sized pieces.

Assemble and serve

  1. In a serving dish, layer the carapace contents, then the picked breast meat, and arrange the claw pieces on top.

  2. Garnish with the claw tips at four points.

  3. Surround the crab with a moderate amount of mixed salad.

  4. Pour the mayonnaise or salad dressing over the crab before serving.
