Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Cure the beef

  1. Mix mace, cloves, allspice, black pepper, and saltpetre.

  2. Rub the mixture into the beef and let it sit for six days, turning daily and rubbing with the pickle.

  3. Roll and tie the beef firmly with tape.

Bake and serve

  1. Place the beef and pickle in a small jar with a slice of beef suet underneath and on top.

  2. Tie the jar closely and bake at 400°F (200°C) for one hour.

  3. Serve cold, sliced thin, and garnished with parsley.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Forms the main body of the dish and carries the cured flavour and texture.
Saltpetre
Helps keep the cured meat pink and adds a characteristic curing flavour.
Beef suet
Adds fat that keeps the lean beef moist during the long, covered bake.
Black pepper
Adds sharp aroma and heat to the spice rub.

The step that matters

Turning and rubbing the beef daily during the six-day cure. The pickle must reach every part of the meat. Regular turning and rubbing keeps the cure evenly distributed, so the surface and interior cure uniformly rather than unevenly.

Swap the mace
