Minced Veal with Poached Eggs

Ingredients

Directions

Prepare the veal

  1. Trim off all brown parts from the veal and mince it very finely.

Make the veal mixture

  1. In a pan, fry the chopped shallot in plenty of butter until light straw color.

  2. Add a large pinch of flour and a little stock, then stir in the minced meat, parsley, pepper, salt, and nutmeg. Mix well and add more stock if necessary, letting it heat by the side of the fire.

  3. Once hot, remove from heat and stir in the egg yolk and strained lemon juice.

Serve

  1. Serve with fried slices of bread around it and top with three or four poached eggs.

What each ingredient does

Veal
Provides the main body of the dish, becoming a finely minced, savoury meat base.
Butter
Carries the shallot flavour and browns gently, adding richness to the mixture.
Flour
Thickens the stock-moistened meat so it holds together rather than running loose.
Egg yolk
Enriches and thickens the mixture as it is stirred in off the heat, adding richness.
Lemon juice
Adds acidity that brightens the rich meat and yolk.

The step that matters

Stirring in the egg yolk off the heat. Egg yolk thickens through gentle heat. If the mixture is still boiling when the yolk goes in, it can scramble and turn grainy, so it is added only after removing the pan from the heat.
