Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Clean and prepare the pigeons for roasting.

  2. Lay the pigeons in a baking pan on their backs.

  3. Place a thin slice of salt pork or bacon on the breast of each pigeon.

  4. Cover the bottom of the pan with cold water.

Bake and serve

  1. Bake in a hot oven at 400°F (200°C), basting often until done.

  2. Transfer the pigeons to a serving dish on their backs.

  3. Garnish with watercress and sprinkle with lemon juice before serving warm.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pigeons
Provide the main meat, which cooks through in the oven while staying moist under basting.
Salt pork or bacon
Lays fat over the breast, basting the meat as it renders and adding savory flavor.
Lemon juice
Adds acidity that brightens the rich, fatty flavor of the roasted birds.

The step that matters

Basting often until done. Frequent basting with the pan juices keeps the lean breast meat moist while the bird cooks through. Pigeon can dry out if the pan is left unattended.
