Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Very small young french beans
Provide the main vegetable, cooked until tender while keeping a crisp bite.
Butter
Adds fat and richness, coating the beans with a glossy, savoury finish.
Lemon juice
Adds acidity that brightens the buttery flavour of the beans.

The step that matters

Boil in an uncovered saucepan until tender. Boiling in plenty of fast water with the lid off lets the beans cook evenly and keeps their bright green colour, since trapped steam and acids can dull the colour and overcook them.

Swap the beans

How well each one fits the dish's main ingredients (butter, lemon):

  1. Almondfits better
  2. Pistachiofits better
  3. Chickpeafits better
  4. Beansthe original

Fit is the average pairing score against butter, lemon. Candidates are from the same food group and used in at least 100 recipes.
