Directions

Make the wort

  1. Cook the grated potatoes in the steeped hops immediately to prevent darkening.

  2. Do not fill the jug completely.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Provide starch that adds body to the brew.
Hops
Add bitterness and aroma that balance the sweetness.
Sugar
Provides the sweetness that the yeast ferments into alcohol and carbon dioxide.
Yeast
Ferments the sugars, producing alcohol and gas that makes the mixture rise.

The step that matters

Stir in the yeast only once the mixture is lukewarm. Yeast cells are damaged or killed by hot liquid, so the mixture must cool before the yeast goes in to ensure fermentation starts.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar):

  1. Mustardfits better
  2. Cucumberfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against hops, sugar. Candidates are from the same food group and used in at least 100 recipes.
