Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Make the batter

  1. Beat together ½ pound sifted sugar and 4 eggs for 1 hour.

  2. Add ¼ pound dried sifted flour, juice of ½ lemon, and grated rind of 1 lemon.

Make the sugar syrup and egg mixture

  1. In a separate pot, boil 1 pound loaf sugar in ½ pint water.

  2. Whisk the boiled sugar with 8 eggs until cold.

Combine and bake

  1. Stir in 1 pound flour and keep beating until ready to bake.

  2. Bake in a slow oven at 300°F (150°C).

  3. If using a quick oven, bake for 1 hour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Beaten to trap air, giving the bread its light, airy structure.
Flour
Forms the structure that sets as the bread bakes.
Sugar
Sweetens the bread and helps it brown during baking.
Lemon juice
Adds acidity and a bright flavour to the bread.

The step that matters

Keep beating after adding the flour. Beating after the flour is stirred in keeps the batter aerated; if it is left to stand, the air bubbles collapse and the bread bakes up denser.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, egg, flour):

  1. Raisinfits better
  2. Vanillafits better
  3. Lemonthe original
  4. Figfits about as well

Fit is the average pairing score against sugar, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
