Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein and bulk of the salad, becoming tender when boiled.
Celery
Adds crisp texture and fresh moisture to the salad.
Hard-boiled eggs
Their yolks are mashed into a paste that thickens and enriches the dressing.
Olive oil
Adds fat that emulsifies with the yolks to make the dressing smooth and rich.
Prepared mustard
Adds sharpness and helps bind the dressing into an emulsion.
Strong vinegar
Adds acidity that brightens the dressing and cuts the richness of the yolks and oil.

The step that matters

Pour the dressing over the salad just before serving.. Vinegar and salt draw moisture out of the celery and soften its crispness over time, so dressing added too early makes the salad limp and watery.

Swap the lettuce

The recipe marks lettuce as optional. How well each one fits the dish's main ingredients (chicken, celery, egg, olive, mustard, vinegar):

  1. Lettucethe original
  2. Capsicumfits about as well
  3. Broccolifits about as well
  4. Cucumberfits about as well

Fit is the average pairing score against chicken, celery, egg, olive, mustard, vinegar. Candidates are from the same food group and used in at least 100 recipes.
