What each ingredient does

Arrowroot
Thickens the milk into a smooth sauce as it heats and starch swells.
Milk
Forms the liquid base that the starch thickens into a sauce.
Butter
Adds richness and a silky mouthfeel as it melts into the sauce.

The step that matters

Stirring the arrowroot into the milk. Starch clumps if it is added to hot liquid or not dispersed first. Mixing it gradually into cold milk lets each granule separate, so the sauce thickens smoothly once it boils.
