Orange Marmalade

Ingredients

Directions

  1. Wash the oranges and wipe them dry. Grate off any discolored parts.

  2. Cut the rind in halves and loosen it with a spoon to remove each half intact.

  3. Remove the core and seeds, leaving the juice and pulp.

  4. Place the peel in a saucepan with plenty of cold water and cover tightly with a cloth.

  5. Boil for several hours until tender enough to be easily pierced with a pin.

  6. Drain the water and scoop out the soft part of the peel, leaving thin skins.

  7. Cut the skins into thin strips, about half an inch long.

  8. Clarify the sugar and boil it to a candy height.

  9. Add the peel strips and after ten minutes, add the juice and pulp.

  10. Boil all together until transparent. Optionally, grate some peel to enhance the color.
