What each ingredient does

Pineapple
Supplies the fruit flavour and acidity that define the sherbet.
Sugar
Sweetens the mixture and keeps the sherbet from freezing rock hard by lowering the freezing point.
Egg whites
Beaten whites add air, giving a lighter, less icy texture.

The step that matters

Fold in the egg whites once partially frozen. Whites folded into a liquid mixture deflate and make it watery. Once fully frozen, the mixture is too stiff to blend in evenly, so timing decides the texture.

Swap the pineapple

How well each one fits the dish's main ingredients (sugar, egg):

  1. Vanillafits better
  2. Raisinfits better
  3. Lemonfits better

Fit is the average pairing score against sugar, egg. Candidates are from the same food group and used in at least 100 recipes.
