What each ingredient does

Sweetbreads
Provide the tender, delicate main protein that forms the body of the dish.
Velouté sauce
Adds moisture and a smooth, rich texture around the sweetbreads.
Butter
Wrapping in buttered paper keeps the sweetbreads moist and enriches them during braising.
Truffles
Contribute a strong, earthy aroma that gives the dish its distinctive flavour.
Ham
Adds savoury, salty depth that contrasts with the mild sweetbreads.

The step that matters

Braise wrapped in buttered paper. Sweetbreads are delicate and can dry out or toughen if overcooked or left unwrapped. Wrapping them in buttered paper traps moisture and gentle heat, keeping the slices tender during the 30-minute braise.
