What each ingredient does

Partridge
Forms the main body of the dish, carrying the stuffing and cooking to tender meat.
Herring
Adds a rich, salty, smoky flavour to the stuffing layer.
Chicken
Forms a pounded binding layer that gives the stuffing a smooth, light texture.
Egg
Binds the chicken mixture so it holds together when spread and cooked.
Sherry
Adds acidity and depth of flavour to the finished sauce.
Butter
Adds fat and richness to the herring mixture, improving mouthfeel.

The step that matters

Roll up the partridge and sew it together. If the roll is loose or the seam is not closed firmly, the stuffing can escape during baking or braising and the bird may cook unevenly.

Swap the clove

How well each one fits the dish's main ingredients (chicken, egg, anchovy, sherry, pepper, potato, butter):

  1. Parsleyfits better
  2. Thymefits better
  3. Garlicfits better
  4. Clovethe original

Fit is the average pairing score against chicken, egg, anchovy, sherry, pepper, potato, butter. Candidates are from the same food group and used in at least 100 recipes.
