What each ingredient does

Steak
Forms the wrapper around the filling and becomes tender during slow cooking.
Bread crumbs
Absorbs moisture and binds the filling so it holds together inside the roll.
Yolk of egg
Acts as a binder that helps hold the bread crumb filling together.
Flour
Coats the rolls so they brown and help thicken the cooking liquid.
Mushroom ketchup
Adds savoury depth to the cooking liquid.

The step that matters

Brown the rolls quickly in butter. Searing creates browned flavour through the Maillard reaction. Browning quickly before simmering seals the surface and builds colour and taste without overcooking the meat.
