Directions

The book says “a good oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the cheese base

  1. Combine the milk, cheese, and butter in a saucepan.

  2. Stir over medium heat until the cheese melts.

  3. Remove from heat and stir in the egg yolks.

Bake and serve

  1. Fold in the whipped egg whites gently.

  2. Pour the mixture into a baking dish.

  3. Bake at 400°F (200°C) for 10 minutes.

  4. Serve very hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Cheese
Melts into the milk base to give the pudding its rich, savoury flavour.
Butter
Adds fat for a smoother, richer texture and mouthfeel.
Milk
Forms the liquid base that the eggs set into during baking.
Eggs
Yolks enrich and thicken the base; whipped whites lighten it and help it set in the oven.

The step that matters

Folding in the whipped egg whites gently. Whipped whites trap air that makes the pudding rise and stay light. Stirring or beating them hard knocks that air out, leaving a dense, flat result.
