What each ingredient does

Raspberries
Provide the fruit flavor and aroma that the vinegar takes on during steeping.
Vinegar
Extracts flavor from the raspberries and gives the finished drink its sharp acidity.
Sugar
Sweetens the vinegar and balances its acidity when boiled into a syrup.

The step that matters

Skim the mixture well as it boils. Foam and fruit solids rise to the surface while boiling. Removing them keeps the vinegar clear and stops impurities that could spoil or cloud the final product.
