Roast Turkey or Chicken

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Pick and draw the fowl, then wash it well in two or three waters.

  2. Wipe the fowl dry and dredge it inside and out with flour, salt, and pepper.

  3. Prepare a dressing using bread and cracker crumbs, and fill the body and crop of the fowl.

  4. In a saucepan, stew the giblets.

Roast and make gravy

  1. Bake the fowl at 350°F (175°C) for 2 to 3 hours, basting frequently.

  2. After removing the fowl, add the giblet water to the gravy, then mix in the chopped giblets.

  3. Just before serving, chop the giblets finely.

  4. Thicken the gravy with a little flour mixed with water, boil, and serve in a gravy dish.

What each ingredient does

Flour
Coats the skin and helps thicken the gravy for a smooth, body-rich sauce.
Bread crumbs
Form the dressing that fills the body and crop, adding bulk and moisture.
Cracker crumbs
Add to the dressing's bulk and texture alongside the bread crumbs.
Giblets
Simmered to make the stock base of the gravy and add savory flavor.
