What each ingredient does

Flour
Thickens the sauce and, when cooked until brown, adds color and a toasted flavor.
Butter
Adds fat and richness and carries the flavor of the aromatics into the sauce.
Beef stock
Adds savory, meaty depth to the sauce.
Mushrooms
Add earthy flavor and texture to the sauce.
Sherry wine
Adds acidity and a fruity, nutty aroma to the sauce.

The step that matters

Cooking the flour until brown. Flour must cook long enough to lose its raw taste and gain color, but it can scorch quickly over heat. Stirring constantly keeps it from burning, and cooking it before adding liquid helps prevent lumps.
