Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the loaf

  1. In a large bowl, combine the ground beef or veal, salt pork, crushed crackers, dissolved isinglass, butter, salt, pepper, cloves or nutmeg, and eggs. Mix the ingredients well until fully combined.

  2. Transfer the mixture to a loaf pan and smooth the top.

Bake and serve

  1. Bake for 1 hour or until cooked through.

  2. Let it cool before slicing.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ground beef or veal
Forms the main body of the loaf and sets into a sliceable texture when cooked.
Eggs
Bind the mixture together and help it set firm as it bakes.
Isinglass
Gelatin-like binder that helps the loaf hold together and firm up as it cools.
Salt pork
Adds fat and moisture, keeping the loaf from drying out during baking.
Boston crackers
Absorb moisture and add body, helping the loaf hold its shape.

The step that matters

Let it cool before slicing. The loaf is still setting while hot and is fragile. Cooling lets the proteins and binders firm up, so slices hold their shape instead of crumbling or sliding apart.

Swap the clove

How well each one fits the dish's main ingredients (beef, pork, butter, pepper, egg):

  1. Parsleyfits better
  2. Thymefits better
  3. Nutmegfits better
  4. Clovethe original

Fit is the average pairing score against beef, pork, butter, pepper, egg. Candidates are from the same food group and used in at least 100 recipes.
