What each ingredient does

Cayenne pepper
Adds heat and sharpness that gives the sauce its pungent bite.
Vinegar
Acidity that preserves the sauce and sharpens its overall flavour.
Soy sauce
Adds salty, savoury depth that rounds out the sauce.
Garlic
Contributes pungent aroma and savoury flavour as it steeps.
Shallots
Add mild sweetness and aromatic onion flavour to the sauce.
Anchovies
Contribute deep umami and savoury richness to the finished sauce.

The step that matters

Rub the mixture through a sieve. Pressing the mixture through a sieve removes solid bits so the sauce becomes smooth and clear rather than gritty. Thorough straining at this stage keeps the bottled sauce stable and pleasant to pour.

Swap the clove

How well each one fits the dish's main ingredients (pepper, vinegar, sauce, garlic, shallot):
