Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Bread crumbs
Soak up the hot milk to form the soft, body-giving base of the pudding.
Milk
Provides moisture and softness as it sets the crumbs and eggs into a custard-like texture.
Egg yolks
Thicken the pudding and add richness as they set during baking.
Egg whites
Whipped with sugar to form a stiff froth that bakes into a light, browned topping.
Jam or jelly
Adds sweetness and fruity flavour in a layer under the meringue-style topping.

The step that matters

Beating the egg whites to a stiff froth. Egg whites must be whipped until stiff so they hold air and form a light topping; under-whipped or greasy whites will deflate and bake flat and dense.
