Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Swells in hot milk to thicken the pudding into a soft, creamy set.
Milk
Forms the liquid base that the tapioca thickens into a creamy custard.
Egg yolks
Enrich the custard, adding richness and helping it set smoothly.
Egg whites
Whipped to stiff peaks, they form a light meringue topping that browns under heat.
Sugar
Sweetens the pudding and the meringue topping, and helps the whites hold their peaks.

The step that matters

Boil the custard after adding the yolks. Egg yolks thicken as they heat, but overheating can curdle them. Keep the mixture at a steady boil only as long as directed so it thickens smoothly.

Swap the coconut

How well each one fits the dish's main ingredients (milk, egg, sugar):
