Directions

Prepare the apples

  1. Remove stems and blossoms from the crab apples.

  2. Scald the apples and pour off the first water.

Cook and strain

  1. Add plenty of water and cook the apples slowly until they begin to soften.

  2. For jelly, strain the juice through a flannel.

  3. Use 1 pound of juice for every pound of granulated sugar.

  4. For jam, add more water.

  5. Let the apples stew until very soft.

  6. Strain the pulp through a sieve to remove cores and seeds.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab apples
Provide the fruit, natural pectin and acidity that set the jelly.
Granulated sugar
Sweetens the juice and helps it set into a firm gel.
Brown sugar
Adds sweetness and a deeper caramel flavour to the jam.

The step that matters

Cook and stir the mixture carefully until it reaches the desired consistency. Sugar and fruit acid must be boiled to the point where enough water evaporates and pectin can form a gel. Stopping too early leaves a runny set, while overcooking can make the jelly stiff or scorch the sugar.

Swap the apple

How well each one fits the dish's main ingredients (crab, sugar):

  1. Raisinfits better
  2. Lemonfits better
  3. Vanillafits better
  4. Applethe original

Fit is the average pairing score against crab, sugar. Candidates are from the same food group and used in at least 100 recipes.
