Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓

To Preserve Citron

Ingredients

Directions

Prepare the citron

  1. Pare the citrons and cut them into 1.5‑inch thick slices, then into strips.

  2. Remove all the seeds with a small knife.

  3. Weigh the citron and use 1 pound of white sugar for each pound of citron.

Cook

  1. In a pot, combine 1 pint of water for every 10 pounds of citron and simmer for 20 minutes.

  2. Add the citron and boil for 1 hour or until tender.

  3. Before removing from heat, add 2 thinly sliced lemons (seeds removed) and 2 ounces of root ginger.

  4. Do not boil long after adding lemon and ginger.

  5. Do not stir while boiling.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and ginger barely smell alike, yet cooks put them together in 14,054 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Citrons
Form the bulk of the preserve, becoming tender and translucent as they cook in syrup.
White sugar
Sweetens the preserve and, at high concentration, helps preserve it by drawing out water.
Lemons
Add acidity and bright citrus aroma that balance the sweetness.
Root ginger
Adds warm, spicy aroma to the syrup and fruit.

The step that matters

Do not boil long after adding lemon and ginger. Prolonged boiling dulls the fresh aroma of lemon and ginger and can make the syrup taste flat or bitter, so the flavourings are added near the end of cooking.

Swap the lemon

How well each one fits the dish's main ingredients (sugar, ginger):

  1. Lemonthe original
  2. Orangefits about as well
  3. Limefits less well
  4. Vanillafits less well

Fit is the average pairing score against sugar, ginger. Candidates are from the same food group and used in at least 100 recipes.
