Directions

Make the starter

  1. Boil the hops in the water for a few minutes.

  2. Strain the hot mixture over the grated potatoes, stirring until it thickens like starch.

  3. Add the sugar and coarse sea salt, then let the mixture cool.

  4. Once cool, stir in the yeast.

  5. Let it stand until a thick foam rises on top.

Use

  1. Use 1 coffee cup of yeast for every 6 loaves of bread.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Grated potato thickens the liquid as its starch sets, giving the starter body.
Hops
Hops add bitterness and aroma, and their boiled liquid helps the starter ferment.
Sugar
Sugar is food for the yeast, fueling fermentation and the foam that forms.
Yeast
Live yeast ferments the sugars and starch, producing gas that makes bread rise.

The step that matters

Let it stand until a thick foam rises on top. The foam shows the yeast is active and fermenting. If the mixture is still hot when the yeast is added, the yeast can be killed, so the mixture must cool first.

Swap the potato

How well each one fits the dish's main ingredients (hops, sugar):

  1. Mustardfits better
  2. Cucumberfits about as well
  3. Capsicumfits about as well
  4. Potatothe original

Fit is the average pairing score against hops, sugar. Candidates are from the same food group and used in at least 100 recipes.
